I heart berries and for the most part, don’t discriminate. Although, I do mildly play favorites – at the top of my favorite berry list? Blackberries. After all, I’m a girl that does judge books by their covers (I’m a designer, give me a break) – therefore, the prettiest berry is undoubtedly going to win me over.
Besides beauty, blackberries possess the most amazing flavor and color, which makes them a great compliment to citrus fruits. Below, I’ve paired them with lemon, coconut and a bit of sweetener for the perfect summer dessert.
Blackberry and Lemon Macaroons
- 2 C unsweetened coconut
- .5 C almond flour
- .25 C coconut oil
- .5 C liquid sweetener of choice (clear agave, maple syrup)
- .33 C mashed blackberries
- 1 T lemon juice
- few drops of lemon essential oil (could use extract)
- zest from one lemon
- dash of sea salt
In a large bowl, combine all ingredients. Using a small scoop, scoop out mixture and place on dehydrator tray – dehydrate for 4 hours at 105. Check often to make sure not to over dehydrate. Also, you could use your oven on the lowest setting, but check every 10 minutes not to over dry!
