Happy Birthday… TO ME.
And a happy one it is.
See, for the past few years, my birthday has always been somewhat depressing. Why? Because I sat at a desk for 8 hours thinking about how different my life had become from what I had originally planned and/or wanted. So it wasn’t my birthday, per se, that was depressing. But rather, the fact that I had let another year go by without changing a damn thing. That, drove me insane.
I’m strong, I’m independent, and yet, I just couldn’t break free from the fear that was keeping me at a less-than-fulfilling job. Me, the person who somewhat despises contentment, was living a somewhat ‘content’ life. Ultimately, I had let the fear of failure keep me stagnant for 5 years. Moreover, I also let my loyal nature get the best of me. A word to the wise: Always take care of yourself, because more than likely when it comes down to it, so will everyone else.
So this year when I woke up, it was totally different! For the first time in forever, I was so friggin’ happy and almost beside myself that I was going to spend the day working on my own business and not someone else’s. Yes, rolling out 100+ Rawxies this morning was hard work, but the representation of the actual act, made it all worth it!
I can’t tell you how blessed I feel to have been gifted this opportunity. Moreover, gifted such great family and friends who continually encourage, congratulate and support me – Thank you.
Now, for those of you who think a ‘raw’ birthday cake would be the feature for today’s post… Well, you’re wrong. Let’s just say, Mamma has no time for desserts when she’s got Rawxies coming out the whazoo
Instead, I decided to Make a dish from Russell James’s Blog – Salsa Finta & Almond Polpetta. Which, I’ve actually made before and loved. Besides working, I’m also trying to pack and clean before leaving town – So, this seemed like a good quick dish to whip up.

As a side note: because my D is currently full, I decided to just make the almond polpetta sans dehydration. Leave out the ‘salsa finta’ in the recipe and just pulse all ingredients in food processor until a crumbly mixture is achieved. You could also mix this in with the sauce to achieve a ‘meat-like’ texture.
I used a ring mold to make it fancy
