Creamy Tahini Dressing

As of late, I’ve been leaning towards more savory dressings, as opposed to sour vinegar-based ones. I guess after so many years of thriving on vinegar, my body has finally said ‘no mas’.

My latest creation, was just that – Savory. And while it’s not the most innovative, I found that my altered ratios and added ingredients really kicked it up a notch! As opposed, to most tahini/lemon dressings.

Furthermore, it’s thick enough to be used as a slaw dressing, a salad dressing, or even a dip. Basically, 3 for the price of 1. Love.

Creamy Tahini Dressing

.5 C tahini
3 T water
3 T apple cider vinegar
2 T tamari
2 T lemon juice
1 T olive oil
1 T miso
.75 tsp fresh ground chili paste
3 dates
1 clove garlic

Blend all ingredients in a high-speed blender until smooth.

*In the photo above, I dressed one head of red cabbage, one head of chopped cauliflower and topped with sesame seeds.

Better than food though, was spending time with my best friend, Ashley, last Thursday night! Not only was I stoked to hang out, but also to peruse Mass Street (downtown Lawrence, KS – where Ashley lives). Every time I’m on Mass, I always have many flashbacks of my freshman year of college – Ohhh, sheer craziness!

The Lawrence I remember though (beer, fake ID’s, North Face Fleeces) is NOT the Lawrence I experienced last week. Holy freaking crap. I’m still trying to decide if it has changed since I last lived there, or if I just appreciate the Bohemian/diverse vibe a lot more now. Hmmm, maybe a bit of both? Either way, I was blown away. The food, the people, the West Village (NY) like bars, etc, etc, etc… All of it, was superb.

Basically Lawrence, I heart you. (And you too, Ashley!)

Now, I’m off to fill some cookie orders! The general response I’ve receive so far, has been wonderful. And, I can’t begin to tell you how much I appreciate all of the fabulous feedback (and orders!)… I Freaking love y’all! :)

    The dressing/dip looks delish; I don’t think I’d be able to resist adding a pinch of curry powder, too.

    I think Lawrence must get a little better every year, because I didn’t really enjoy my years living there either. Then again, I’VE changed since then too, so who knows.

    Dressing sounds great! I am always doing the vinegar thing, I totally need to change it up! :)

    I loooove tahini based dressings so I can’t wait to try this!

    My salad dressing as of late has been a bit ridiculous: mixing together lemon juice, salt and avocado andthen proceeding to empty my spice/herb cabinet onto my salad. I am a bit surprised how much I enjoy cinnamon, turmeric, oregano, fennel, etc all in one bowl!

    This dressing with a little curry powder (sub for miso since I am afraid of it) would be amazing I bet! Also, you look great in the picture.

    So glad to hear you enjoyed your time in Lawrence! I’m currently living in L-town, and I totally understand what you mean. I think the town is moving in a good direction, but your experience can depend a lot on the place and the time. Friday night at a frat bar? Helloooo NorthFace and beer. Thursday night at the Jayhawker? Welcome my classy people. Then any night at 8th Street Tap Room or Replay is all about the laid back alternative vibe. So I’m curious, which venues did you hit up?

    OMG. I tried this today and it was sooooo delish!! My fridge was pretty sparce being Monday & not having done my weekly grocery shopping yet, so I paired with what I had on hand–cauliflower, leek, shredded beet & carrot…just whatever I could scrounge up! Regardless of the odd pairing, it was still phenomenal. Definitely a new fav!

    Oh, and those chocolate maca bars look HEAVENLY. I would loveeee to see them added to your products page ;)
